Real nixtamal, not masa flour

Most tortilla chips start from dried masa flour. We cook whole organic corn and steep it in lime, then grind it into fresh masa, the way tortillas have always been made in Mexican kitchens.

Fried in grass-fed beef tallow

Tallow is rendered beef fat. It stays stable at high heat, so it fries a crisp chip, and it doesn't make the chips taste like beef: the flavor comes from the corn. Read our story.
